Sweet Lotus Seed Gruel

Lotus Soup

12 oz lotus seeds, fresh, germs removed
2 c water
1/3 c rock sugar (to taste)
¼ t vanilla extract

To Complete

crushed ice (optional)

For Lotus Soup

Steam seeds for 20-25 minutes until they start to get soft. In saucepan, bring 2
cups water to boil. Add lotus seeds. Reduce heat. Simmer for 10 minutes or until
soft. Add rock sugar. Simmer just until sugar is fully dissolved. Add vanilla extract. Transfer to bowl. Set aside.

To Complete

Serve cold or room temperature. Top with crushed ice (optional)
