Egg Coffee

Yields 4 Cups


2 oz Vietnamese coffee, finely ground
4 c hot water

Egg Foam

2 egg yolks
½ c sweetened condensed milk
1 t vanilla extract

For Coffee

Brew coffee according to your preferred method. While
brewing, start egg foam.

For Egg Foam

Whip the egg yolks, sweetened condensed milk, vanilla
extract, to soft peaks. Add egg mixture on top of the espresso.

To Complete

Divide coffee between four cups. Top each with egg foam.
